The species of mushrooms, such as Nam hai san (seafood mushroom), Nam bung lon (Clitocybe Maxima), Nam dong co (Lentinula edodes), etc… can be prepared into delicious fried dishes. Vietnam Pictorial introduces to readers some of the dishes.

Fried Pho with mushroom sauce
Ingredients:
- 200g of Nam hai san (seafood), Nam dui ga (Coprinus comatus) and Namtai heo; 200g of Banh pho (rice papers); pasty sauce and a dash of seasoning.

Preparation:
- Clean mushrooms.
- Cut Banh pho into square pieces, dip them in flour and fry until they become crispy.
- Prepare for the sauce from oyster oil and soya-sauce and then put the mushroom and fried Pho into the sauce. Cook for a few minutes.
- Served hot with rice.
